It's been a while since I've made this treat - its my Husband's favorite so I made it for X-mas. I like this recipe because it uses the whole egg!

Ingredients
Mascarpone cheese (8 oz)
3 large eggs, separated
5 tablespoons sugar
12-16 ladyfingers
3/4 c espresso
1/4 c Vermouth
cocoa powder (or chocolate shavings)

Separate the eggs. With an electric mixture, blend the sugar and egg yolks until creamy.

Add the Mascarpone cheese and mix until smooth

In a separate bowl, whisk the egg whites until peaks start to form

Add the egg white mixture to the egg yolk mixture and gently fold together

In a separate bowl, mix the espresso and vermouth. Dip the lady fingers in the espresso mixture for a couple seconds. Layer snuggly in a dish, top with half the mixture - repeat.

Chill for a couple hours. Sprinkle cocoa powder on top before serving.

This recipe fits nicely in a glass bread pan. I get the cheese and lady fingers from Trader Joe's. Cheese typically comes in 8 oz tubs. Trader Joe's lady fingers come in a box of 24, wrapped in 4 packets of six. This bread pan takes 12 lady-fingers nicely. I do have extra coffee/vermouth mixture as the lady fingers are on the softer side.

You can easily double the recipe for a larger dish, but we are happy with the smaller size!

Enjoy!
