How hard is it to can?

Try gardenweb.com and go to the harvest forum. There are some very good canners there and they love newbies, and want to help you learn the safest methods out there!
It is very rewarding to open up something you canned in the middle of winter!
You can do alot with the water bath method, judt make sure you follow safe and trusted recipes.
The Ball blue book is a great place to start, just make sure it is the newest edition possible.
Make sure any recipes you try are up to date, you can ask at the harvest forum over at the garden web and they will help you make sure a recipe is safe.
Try it you will not regret it!
I froze my green beans every year until I tried pressure canning them this year and I will never freeze them again, I love them canned!
It does take time and energy but man the food is so good!
BTW, the forum I mentioned will also give advice on what will freeze well and how to dehydrate things!
