Hello i have a few white crested polish but this one confusing me... He/she is about 7 weeks old my first thought when crest was getting bigger was pullet but compared to others waddles are redder!!! Roo???

Pretty sure that's a pullet! Polish cockerels have more jagged rockstar-like crests whereas pullets have nicely shaped poofy domes like your's. Both of the Polish chooks in the picture below are cockerels and while the picture doesn't really show their crests very well it was easy to tell in person that it was much spikier than on a pullet. The wattles also grow quite large and red at a young age. I believe these guys were 8-9 weeks in the first picture and something like 5 months in the second. They make for some crazy little roosters haha.
