The turkey food advice is for the broad breasted "broiler type" turkeys. That food is often loaded with antibiotics and very high protein to force fast weight gain. That's not the way I'd like to raise turkeys. I would look for feed without medication, and certainly no higher than 24% protein, even for turkeys. I use 18% pellets and am happy with that for turkeys and chickens.
For turkey specific advice, there is a very active turkey thread with people who have way more experience than I do. It's a interesting thread, with lots of pictures.
