How do I add more protein?

This was interesting:

"Gelatin is one of the few foods that cause a net loss of protein if eaten exclusively. In the 1960s, several people died of malnutrition while on popular liquid protein diets.[10]"

I guess that explains when I was looking at feed recipes earlier, I happened across a state university study where they had "gelatin deprived" the hens, and than were seeing how they reacted when given the proper diet, and if they returned to health. I was trying to figure out what gelatin deprived meant.
 
The Gelatine I have, Knox brand, suggests that it is only 2% of the RDA for humans. As humans need VERY little protein in their daily intake, I would have to assume that the protein content of Knox Gelatine is negligible for chickens, or not a significant source. Or maybe because we are so big and they are so small, it becomes significant to them. Well... .25 oz per 5 oz of feed is only a fraction of that 2% RDA.......

we are talking "shaped" or molded hard cakes here right? otherwise, why would you use gelatine?
 
The percent of protein in a "prepared" cup of gelatin would have to be fairly negligible. After all, what is it - a 1 gram packet of dry gelatin to an 8 ounce cup of water?

I don't understand the statement in Wikipedia about "protein deprived" . . . the footnote the person used is citing a university study about the "lack of vitamins and minerals" in a protein drink. The university website says nothing about any "net loss" of protein or "protein deprived" that I can see.

Yesterday I decided to hard boil some of my fresh eggs. When they got done and I went to peel them the egg white was mushy.. The yolk was solid and done.. I read that not enough protein can cause this problem. Is this true and if so what should I add to my flocks diet and how much should I add? Right not they are on layer crumbles 18% protein.
 
We live in northern Michigan. There is a local fishing industry, well I wouldn't quite call it an industry. There is really only one fishing boat that provides the fresh fish locally. I'm not even sure if they are still fishing. I know they will be quitting soon either way as the weather will be turning.
Northern Michigan Island? Beaver? Round? Mackinac? Bois Blanc? Just curious because I am also on a Northern Michigan Island - Mackinac. We are just getting started with chickens this summer - we've got three...
