The Old Folks Home

I find I prefer the pressure cooker over the crockpot; it really tenderizes meat and has it done really quickly. However, if you're away all day, the crock is great...set it in the morning and it's ready when ya get home. :)

Cynthia12, send your son by here for some southern hospitality! I'll share my hush puppy recipe if you'd like.

Wisher, I was thinking about you today -- haven't seen you on here in a while. What beautiful, cool weather we're having!

I have found that the unsalted butter I buy at Sam's seems more like fresh butter. We finally have a local source for Amish butters, cheeses and bulk products. I hope it is able to stay in business in such a rural area. Here is a thread on Amish stores around the country:

Quote: I find shopping quite easy. Produce section, dairy section, and meat/fish/chicken sections. We eat a lot of cheese and yogurts, but little milk. I only buy whole milk--after a big argument with the pediatrician. THey have all bought into the government program of drinking low fat milk will keep everyone thin. Really? AMericans are heavier than ever. My kids are tall thin and decent soccer players. ANd good students.

I went to a new OB office about 2 years ago when in desperite need of hormone replacement. We discussed all the wholisitic options that I had tried and then discussed diet. She actually handed me cards for a couple people who I would be interested in. THey can't earn the Nutritionist title because they won't follow the designated guidelines to be come a registered nutritionist. In my first pregnancy I was gestational diabetic ( my wake up call) and the reg dietician wanted me eating 300 carbs a day. I immediately tossed the paper work and followed Atkins maintenence for the rest of the pregnancy. That worked well.

"The law does not require manufacturers to tell consumers when milk solids are in food or milk. 'It’s a [potential] scandal because it’s unlabeled.' Michael Pollan writes about this as well in In Defense of Food: 'In the case of low-fat or skim milk, that usually means adding powdered milk. But powdered milk contains oxidized cholesterol which scientists believe is much worse for your arteries than ordinary cholesterol.'”

My kids don't get powdered milk-- I'd rather pay a wee bit more. I used to buy from a local dairy. It is gone now. Have thought of having our own goats. THe only time my kids get powdered milk is when I mix together peanut butter and dried milk to make an edible playdough.

THere is a lot of evidence now clearly showing that a high carb diet causes the high insulin releases which damages the inner lining of the arteries. This leads to arthrosclerosis, plaque build up and heart attacks, and far more. The GREAT news is this is preventable and reversable. THe newer treatments for arteries with some blockage is not surgery but rather a change in diet and increased exercise. Simple. A cure that doesn't put money in the pockets of surgeons or hospitals.

I really believe we can save a lot of money as a nation if we eat good whole foods, reduce sugar and refined carbs to a level where our bodies are healthy again. THe number ofoverweight and obese children at our local school is very sad.

I'll let my son know that I am hearing that southern hospitality already here on a forum.

I had to go look up a hush puppies recipe, wasn't sure what they were. Sound very yummy.

They're especially good with onion in them.

Here you go, a recipe from Bayou Cuisine:

Bayou Cuisine Hush Puppies

1 c. self-rising corn meal
½ c. self-rising flour
1 tsp. sugar
1 tsp. baking powder
2 large eggs
2 medium onions, finely chopped
1/2 c. buttermilk

Mix all ingredients except milk, stirring well. Mix in milk. The batter should be the consistency of thick cake batter. (Thicken with corn meal or thin with buttermilk, if needed. Drop by spoonfuls into hot fat (350 degrees). If they do not form a ball immediately, the batter is not thick enough. Turn hush puppies so they they brown evenly on both sides before removing to drain.

I love oinions!! THey make most foods more savory! Easy recipe. My brain is churning : how to make it low carb. Or I can save it for when I have reached my goal!!
