I vent sex and look at head patterns. Get a pretty good job on them too. If I'd had someone to take pictures while I did it I would have got pics and posted them. basically just like sexing a goose or turkey.
I'm not familiar with emu or turkey genitalia. They have a similar cork screw penis like geese?

Not a cork screw, more like a small whitish thread. but size wise very like, you would use the same sort of pressure to expose the penis. I wish I'd got pics, it's kinda hard to explain.
