I have been giving a friend duck eggs for a few months and just last week her husband got very ill after eating them. I was shocked, as I've been eating duck eggs for 7 years with no ill effects. But apparently he was eating them 'over easy' with a runny yolk. My sister, who has had cage-free chickens, said that she always warned folks to thoroughly cook eggs and never ever eat farm eggs (chicken or duck, or quail) over easy. I'm told that organic fed, cage-free farm chickens and ducks are generally not treated for salmonella, where eggs bought at the store are treated, along with other medications.
So my question is: does anyone treat their ducks for salmonella and is it something I need to consider? And I just want to confirm that a well cooked eggs should not cause salmonella poisoning (maybe a label on my egg box should state the hazards of undercooked eggs). With all the publicity about eating runny eggs, I just didn't imagine that people still ate them this way!
Thanks.
