Eating farm eggs vs. store eggs over easy

I have been giving a friend duck eggs for a few months and just last week her husband got very ill after eating them. I was shocked, as I've been eating duck eggs for 7 years with no ill effects. But apparently he was eating them 'over easy' with a runny yolk. My sister, who has had cage-free chickens, said that she always warned folks to thoroughly cook eggs and never ever eat farm eggs (chicken or duck, or quail) over easy. I'm told that organic fed, cage-free farm chickens and ducks are generally not treated for salmonella, where eggs bought at the store are treated, along with other medications.

So my question is: does anyone treat their ducks for salmonella and is it something I need to consider? And I just want to confirm that a well cooked eggs should not cause salmonella poisoning (maybe a label on my egg box should state the hazards of undercooked eggs). With all the publicity about eating runny eggs, I just didn't imagine that people still ate them this way!

Thanks.

I am not sure about the salmonella... I would eat a runny farm fresh egg over a store bought egg any day. I can tell you that my duck eggs make my stomach hurt really bad! It took about two weeks before I put 2&2 together. So I did a Google search and found a few places where it explained that duck eggs have a certain enzyme that some people can't tolerate as well. Almost like we are allergic. I do not have this same problem with chicken eggs. So maybe that is what happened with your friends husband?

Thanks for the response. Perhaps he developed an allergic reaction, hard to tell. I know one thing, he doesn't eat runny eggs anymore. I found a new outlet for my eggs, a local animal rehabilitation facility. They were overjoyed to get the 3 dozen eggs I gave them and will look forward to more.

I started eating my duck eggs when they started laying last year, at least a couple times a week, and after 2-3 months, one evening I got really sick and vomited (well, for about 6 hours straight....ugh). Then the next week it happened with french toast (made with chicken eggs, just in case). Happened one more time with some brownie batter (just licked the bowl), and then I figured it out and stopped eating eggs. It's been 5 months and I haven't gotten sick once. The only thing I could figure is that something in the duck eggs made me sensitive to eggs in general. I hope I can at least go back to eating chicken eggs again. :/ Still too afraid to try though...6 hours of that makes for a miserable experience.

Hey Reb,
I've been eating my duck eggs for a month now. I've had them scrambled with cheese, in pancake mix, and in french toast. All the eggs have been a few days fresh and fully cooked. I have not had any adverse effects other than an angry wife. (She refers to the fresh eggs as "babies")

I was going to name my ducks after all my favorite marinades! She didn't like that idea either.
(BTW, I don't eat my ducks, just the eggs)

Enjoy,
Rich

That is funny about the names! We named our chicks Sunny (side up) and (eggs) Benedict. We will be getting 2 more chicks and one will be named Hamlet as in ham omelet. Hahahaha

I enjoyed my duck eggs for one week before I noticed a bad stomach ache. I kept eating them for another week before I thought MAYBE it's the duck eggs! Quit eating them for three days, no stomach ache. Started eating them again , instant stomach ache!. My husband ate them, no problems. Gave them away, no problems. Have since had our ducks adopted by family, they eat them every day! No problems! None of us have allergies to anything but weeds. For some reason, out of all of those people, I can't tolerate them. thats quite a few people that don't have a problem! I'd say you shouldn't worry!

Thanks! Im sure hopeing no one in our household has reactions, I rarely ever cook our eggs anyway but overhard and well done in every aspect....so I think Ill be sticking to that with our "home made" eggs....and if we really have an itch for anything runny ill buy them in the store, just to be on the safe side!

I would think that you would have less chance of salmonella with your own eggs than with store eggs because you know where your birds have been and how well they're treated. I've eaten farm fresh chicken eggs sunnyside up/over easy with no problems. However, I've recently noticed that I have a sensitivity to chicken eggs now. I want to try duck eggs, but can't get anyone to sell them to me fresh. I can order them online, but they want you to buy a lot and I only want a few to try.
