Cooking Zucchini

Sorry to bother y'all, but it appears The Easy Garden is still down.

I traded a neighbor some tomatoes for zucchini and found a recipe for cheesy zucchini casserole. It calls for cubed zucchini, but it doesn't say if I should peal it first.

Can anyone please help?

If you end up with some extra zucchini you should make chocolate zucchini cake with cream cheese frosting....
 
Oh..no need at all at peel zucchini!! The skin is very thin. And all very edible. I like to thin slice zucchini and yellow squash. Peel an onion, and dice. ..heat up some butter or bacon grease. Toss the squash and onions.....and fresh or dried dill. No water needed. Let it all stem down to tender perfection!! Enjoy!!!
