What is going on!

I hope you get to the bottom of it! I thought my EE hen was only laying once or twice a week - that is until I found her nest with two brown (flockmates) and 8 green (hers) eggs in it! I collected those and tested them and they were still fresh. It's been cool here. Since I've locked her in, she's producing 6 to 7 eggs a week along with most of her flock mates. I have ten, and all of them are laying - thank goodness they've decided to use the coop nesting boxes because I do let them free range 4 or 5 days a week. Mine don't like being locked in either, but it's the best way to train them. They are creatures of habit, and they will follow the leader too, so you don't want them learning to hide eggs, if that is indeed what they are doing.

Like you, I have two coops. I had two hens in one coop one day and the other 8 in the other coop. I found THREE eggs in the coop with two hens. The only explanation is that one of the hens laid two eggs in one day, since I checked before I went to work and found three at the end od the day. I don't see that in my birds on a regular basis, but it does happen from time to time, especially in my young layers. Good luck!
