When should I start restricting feed? (Cornish)

I have Cornish Cross chicks who are being brooded with my Broad Breasted White turkeys..
They are coming up on 3 weeks of age, and are growing INSANELY fast.
I am supplementing their feed with additional calcium, in the form of powdered oyster shell in an attempt to help prevent any leg issues... (I know, I know...)

I would also like to start restricting feed as well to slow down their growth rate a bit...

Can anyone tell me when is a good time to start doing that with the Cornish? And is it safe to do it with the turkeys in there as well> (The turkeys are just a few days older)

I removed their food for a night a few days ago, and when I walked in the next morning to feed, one of the chicks was dead. I dont know if this had anything to do with the fact that I removed their food for the night though...
 
We just processed our first batch ever of cornish and I started restricting their feed at 3 weeks. I know some say 12 hours with food, 12 hours without, but I just ended up feeding mine in the morning and then again with a smaller portion around 3 in the afternoon. Seemed to work ok. We had four of them hit 8 pounds before processing and the other two, who were smaller from day one, were just under 6 pounds. We did not supplement with anything other than some apple cider vinegar in the water and the occasional dish of chick grit.
