this may be a dumb question, but if we want skinless meat for soup do I still need to pluck???
 
nope.

That's how we clean most game birds - breast, thighs, drummies... break the skin @ center of breast and it should peel back quite nicely

it might be worth plucking a few though because boiling the whole carcass is what makes a truly great stock.
