What is Taco my turkey doing?

Not sure what my turkey is doing but every time I get behind her to pick her up she starts to lay down and spread her wings with her mouth slightly open, at first I thought maybe it was a health concern and that maybe something was wrong because she also does it sometimes after I put her down as well but now that I think about it, does she think I'm trying to mate with her? That's the only thing I can think of because she only does this when I'm right behind her and only stops after I leave the area. Am I doing something wrong or is she sick? Any feedback is appreciated.
