These cookie bars are packed with texture and flavors. Cinnamon, chocolate, and coffee are combined into a rich, indulgent bar. They’re easy to make and incredibly delicious!

Ingredients for the cookie:
1 cup brown sugar
1 cup (2 sticks) salted butter, softened
1 tbsp espresso powder
1 tsp vanilla extract
2 and 1/4 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
2 cup chocolate chips (12oz)
Instructions:
Assemble your ingredients:
Preheat oven to 375 degrees (Fahrenheit)
Line a half sheet pan (cookie sheet) with parchment paper.
Cream the butter, sugar, vanilla, and espresso powder together.
Add the flour, baking powder, and salt.
Mix until combined. It will be pretty crumbly.
Stir in the chocolate chips just until distributed.
Dump the mixture onto the baking sheet, spreading loosely until fairly evenly distributed.
Using your hands, push the mixture down until firm.
Bake for 5 minutes.
Rotate the pan, and bake for an additional 5-10 minutes, until the edges are just getting golden brown.
While the cookie part is cooling, make the glaze.
Glaze ingredients:
1 tbsp butter
2 tbsp milk
3/4 cup powdered sugar
1/4 tsp ground cinnamon
Instructions:
Put all the glaze ingredients in a small saucepan.
Place over medium/low heat, and mix it all together. It should be smooth and become barely bubbly.
Pour over the bars as evenly as possible, then use a spatula to spread.
Once just warm, slice into desired size, (I usually do 8 along the short side, 4 along the long) and, of course, enjoy!
