Ingredients:


4 Medium boneless chicken breasts
2 tbsp butter
1 tbsp canola oil
salt and pepper
2 tbsp Brown sugar
2 tbsp Orange marmalade
1 tbsp white vinegar
1/2 c. orange juice
4 servings cooked rice

Cooking Instructions


Heat butter and oil in a skillet. Brown chicken on both sides, seasoning with salt and pepper. Combine remaining ingredients and pour over chicken. Cover and simmer about 10 minutes. During next 10 minutes, uncover and baste often with sauce. Serve over cooked rice, pouring sauce over the top.


Note: This is also great with pork chops. If using bone-in chops, increase total cooking time to 50 minutes or until tender.
