    I don't have ducks(not yet), but my neiborough. They always give whole kernals - easy, you don't need anything to grind it and with your amount you can peel by hands, when corn completely dry.

    IMO food issue. Sunflower seeds are always good, but if you can get press cake, that would be even better - less fat, more protein.

    Pears? Ummm... skin and slice, cook in light syrup with some cinnamon. Yum. Wait, this is "feeding flock" thread I can confirm, that chicken loves pears. Whole or sliced, usually they got offcuts only. Peeling will not reduce amount of pesticides, except what was removed with skin.

    99.5 is very low temperature. You should start from 102.2 for the first 3 days, then drop to 101.3 and bring to your 99.5 for last two days. 65% humidity is right number.
