    I find mine have less fat since I started fermenting. But they still have some nice "healthy" fat deposits which I consider a good thing. I would not consider grocery store chickens to be a good standard.

    I put foam bumpers (weather stripping) where the eggs roll. I've only had 2 eggs break in 3 years - not counting the odd one that gets hen-pecked.

    I use a portable nest. Leave it on the floor where you find eggs. Then each day move it a couple of inches towards the nest boxes. I put straw in the roll-away boxes during the learning phase.

    I'm thinking the same thing now. This is what my roll-aways look like. I can decide on a heat source yet. Maybe one of those low wattage seeding warmers.
