    Here is some of the cuts I ended up with. Leg Boneless skinless breast I also got some wings. Butchering was fairly straight forward. Easier than a rabbit imo.

    Just finished up 3 in about 2 hours 15 minutes. Getting better! Gonna give them a couple hours in the chill tank. Then, butchering 2/3. Should be fun!

    Well I cooked the bird today!! First I brined it in a bowl in the fridge for 24 hours. The brine was water, salt, lemon juice, fresh rosemary, thyme and sage. I turned it every couple hours so both sides would be exposed to the brine. Then I put it in a glass oven pan and added onions and...

    Not a bad idea, as I do have running water through my well pump. Area may get a little swampy after a while. I could always put the bucket a bit further away to remedy that. Appreciate the thought!

    Thanks for the props! Really appreciate it. Shears are not a bad idea, and I actually have a pair. For the feet and neck, I basically cut the muscles around the bone/joint, and then twisted and pulled to detach the actual bone. Once all the muscle and stuff was gone, the bone popped out easily...

    Side note. I immediately put the liver in ice water when I found it. After washing up, I fried that bad boy up with some onions. Wowzers, now that was flavor! I don't think I ever ate anything that 30 minutes before was in an animal. It was yummy.
