Have you eaten pastured CX next to heritage birds so that you have a comparison for flavor? I have--we did a taste test. You have said that the age of the bird is paramount, but I raise the two side-by-side with the only real difference being the age of the bird, and I can tell you that the...
That's what happened to ours, too! Our chickens think having a chicken carcass to pick at is the best treat ever.
Have you tried the rooster recipes from Sunstone Farm? Soak the cockerel overnight in wine, then simmer low and slow, and you've got some delicious dinner...
Since I don't process my own and the processor that I use does custom processing, I don't have any heritage birds that are packaged like my CX, which I have cut up and packaged by meat type (light or dark meat). Then it all goes into the freezer...
Anyway, here's a comparison of a package of...
I don't think a single person on this thread disagrees with you. We aren't arguing for giant layer houses and chicken farms, we're disagreeing with the first article posted where the author trashed the CX as basically the worst chicken ever. We're saying that there's nothing inherently wrong...

Well there you go. Just one more reason that I think the author of the originally posted article should have tried raising CX a few different ways before concluding that they were an abomination. Seems like even a tiny bit of asking around would have served him well.
BTW, aoxa--I'm curious. Do...
It was nice of him to respond. I would like to take on a couple of his points, however. He says it's better to have birds that totally free range and eat plants, berries, etc with no supplemental feed. How many back yard chicken owners have the space to supply any kind of chicken--DP or CX--with...
I can't agree more. We grow the CX for flavor as well as efficiency and tenderness. They taste the same as my DP cockerels, that take twice as long to get to a decent weight. Here are a couple of mine. You'll notice that they are not sitting in a feed bowl, but up and wandering around.
That makes no sense. Of course one state will be the largest producer. That's the way math works. If Iowa wasn't the largest producer, another state would be. Even if there were no large laying houses at all, one state would still produce more eggs than another, and be the largest producer. If...
I agree with everything that you have said here. But I do want to remind people that there are millions of people in our country--not to mention all over the world--that only get protein because of cheap food. If all chicken was produced the way I produce my chicken, only the top earners in our...

What has the industry done to the breed, except to breed the best to the best to get an even better next generation? I would say that the breeders of the CX have succeeded spectacularly with what they set out to do. That's what a breed is, humans modifying plant and animals generation by...
