I live in Wellfleet, on Cape Cod, and supposedly the oysters from here are shipped all over the world by name to fancy restaurants. Just over the hill from me is Chipman Cove, where many of the oysters are farmed. If you ask me, their shells just scratch the boat's hulls at low tide.
I know how to open them really well, but I have to say the scent and the slimy texture keeps me from being tempted to swallow them whole (gag).
Wish I liked them - residents shellfishing licenses are very inexpensive.
