Personal Mini Meatloaf
1.5 lb ground beef
Cheddar cheese, cut into thin rectangles about three inches long
1 medium onion, diced small
1 lg. clove garlic, minced or grated
2 eggs beaten
bread crumbs (to a consistency that keeps meat mixture together)
1/2 c. milk
2 T. worchestershire sauce
1/4-1/2 t. Thyme
salt
Pepper
Excluding the cheese, take all other ingredients and combine, do not over mix or meatloaf will get rubbery. Divide mixutre into 4-6 "loaves" depending on who you are feeding, you can make more or less...or make one large on too, does not matter.
Press the cheese rectangles into the loaves and cover by molding the meat mixute around. Top with your favorite meatlaof topping, I use ketchup, diced tomotoes, and some brown sugar. Cover with foil and place in 300 degree oven for about 25-35 mins, uncover and cook with oven set on 350 for 10 more mins. Adjust time according to how large you make the loaves.
some of the cheese will melt out but if you make sure the cheese is well inside the mixture it should mostly stay in...unless you over cook them.
