Again, I'm late on this since it's already Turkey Day, but here's my favorite turkey gravy recipe.
No-Fail Turkey Gravy
Makes 5 cups (approx)
1/2 cup butter (you can use margarine)
1/2 cup flour
3 tablespoons flour
1/2 teaspoon black pepper (more is better, to me anyways, LOL)
4 cups turkey pan drippings
Drain the pan drippings from the turkey through a fine strainer into a large glass measuring cup.
Let drippings sit and then remove any fat from the top of the drippings and discard. Add chicken broth or water to make 4 cups if necessary.
In medium saucepan, melt butter or margarine and add in the desired amount of pepper.
Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat.
Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until bubbly and thickened (about 3 minutes).
If gravy is too thick, add a little canned chicken broth while whisking until it's the desired consistancy. Add salt if desired.
No turkey or chicken drippings? Make using 4 cups of low sodium chicken broth and 1 tablespoon chicken boullion powder. Use this when you want good gravy for chicken/turkey pot pies!
My sister likes to add her own seasonings to the gravy, so she adds them with the pepper to the butter while it's melting.
