Ohh that color caruncle is just from the baby being the wild pattern variation, it will stay dark most of the time but when it really ready to breed it will brighten up to a good amount of red. But also take into account That having the wild pattern variation the caruncle will never get as bright as a white muscovy's would since that pattern is used for camouflage in the South American forests the bright red caruncle wouldn't be very optimal for hideing from predators .
