Question about processing

Hi, we just butchered a cornish rock. Do I have to put it in ice water to cool or can I put it in a bag in the refrigerator for 24 hours? Thanks!
 
Ice water is best from what my butcher told me. Otherwise bacteria starts to grow. She says never close the bag if the chickens still warm.
