Question about thermostats for a Diy coolerbator

Hello, I am creating a coolerbator (an incubator made out of a cooler) and I was wondering if this thermostat is sufficient :

That CAN be used, but wafer thermostats have less variance in temp. Make sure, if you do get one, that it is not just the wafer.

I am assuming the one you linked to is a knockoff of the STC-1000 water heater thermostat?

ETA: I used one in my own version of a coolerbator and I love it. It is very steady!
