You can just use scissors. Also, if you are nervous about trimming, try buying small thin hairties and making pigtails. That's what I give my little polish roo Hats. (I also cut him mullets. Lol. To try to make him look more manly. He is the most feminine roo ever.)

They lay fairly well, about 4 eggs a week from mine, apiece. Not super layers, but decent medium eggs. I live in N Colorado, so it gets fairly cold here and they keep up; they're actually the first ones out of the coop when it snows. Maybe because they can't see it until they step in it
I do not think it would be too cold. As a matter of fact, the farthest back they can track polish chickens is to the Netherlands, and I am probably mistaken, but I think that it is a bit chilly there. When it is raining over here where I live, all of my chickens are hiding from the rain in the coop, except my polish roo and my two polish ladies. Mine love the rain actually, although the rooster can get a little irritable when his crest gets wet and falls into his eyes.I want to get Polish, but I live in Wellsburg, New York. would it be to cold there?
