Granny's gone and done it again

Kathy’s White Trash Corn Bread - (Our friend Kathy says one bite and you’re white trash. A small price to pay)

(NOTE: I had to go 60 mins rather than 30. Cool for 10.) It was delicious!

Mix together:
1 can creamed corn
1 can whole corn (drained)
2 eggs
1 cup sour cream (can reduce to ¾ c)
1 package Jiffy Corn Bread mix (that’s right I said it: Jiffy!)
1 cup melted butter (can reduce to ½ c and I usually do) at about room temperature

Put into a well buttered or preferably Crisco greased casserole (cast iron pan works best and that’s what we use -- a size #8 Wagner ware or similar) BAKE at 350 degrees for 30 minutes until done

Serve warm or hot for that matter! Good with honey, butter, jam or all 3 or by it’s own delicious self. It’s a breakfast or dinner thing. Take your pick. Serves 6 people generously.
This sounds really good. Jiffy contains lard, I'll have to find another brand.

that sounds good! I have made my cornbread before and added creamed corn and shredded cheese to it . It does take a lot longer to bake.
