My chickens having been laying eggs for about two months now and this morning when I went to collect the eggs I noticed one was exceptionally large. Is this normal?

Probably a double yolker. Relatively common, especially in new layers.

That one might be a triple yolker ...or a shelled egg within a shelled egg.
