Canning Chicken Stock? Will this work?

DH is butchering some roos today and I would like to make homemade chicken stock based on the Frugal's Chicken Stock thread. I won't go through enough chicken stock before it all goes bad, so I'd like to can it. I use the boiling method to can since I haven't learned to can anything else besides homemade spaghetti sauce.

Will this method be ok with the chicken stock? Can it go in the cupboard afterwards or will it spoil? If it will spoil, can I just through the jars in the freezer?

In my experience..chicken/chicken stock is very easy to spoil..NO you can't safely water bath can it..YES you can freeze it..if you are going to use canning jars just don't overfill..When I can any meat stock, I pressure can it for 90 min. 10lbs pressure for qts. if I have a jar that doesn't seal I let it cool down in refrig a few hrs and then stick it in the freezer.

I live in an Amish Community..they can everything due to no refrigeration..since we are in "dog days" now they will not butcher or can any meat until dog days is over..they say it won't keep a seal..I hope that isn't true..we butchered 24 meaties yesterday and I have them brining and will can some tomorrow..but I do have AC and my pantry is cool so I hope I don't have problem..

I prefer to freeze my stock in vacum bags in pint & qt sizes, it keeps very well this way.

Thanks! I will throw them in cans while hot, if they seal great, if not it's no biggie since they have to go in the freezer anyway.

Al, your idea is great except we don't have any vacuum freezer bags. I would like to got some eventually since we always end up with so much zucchini come the end of the summer. But, meanwhile, we can what we can and eat zucchini everyday until we don't have any more.

If this seems to work well, I will see about getting a pressure canner AND freezer bags.

Sandi, with the jars that are sealed via the pressure canner, can they be stored in the pantry or do they have to freeze as well?

I'd like to know that too! I've read 3 months in zip lock baggies, but not sure how much longer if it's been vacuum sealed or canned.

I always pressure can mine. As stated earlier in this thread, 90 minutes at 10 pounds for quarts. Leave an inch head space and they should always seal properly and should keep for a couple of years.

..frugal..that is my answer too..however, mine rarely last that long..and as I am usually more pinched for freezer space (only have 2..lol) I do use the frozen first..
