White Leg Horns

That is not a breed I would choose for meat as they do not have much meat on them. If I didn't have any choice, I'd process around 16 to 18 weeks. He would not be full size but he would still be tender and tasty.
 
They're bred for laying eggs. There won't be much meat no matter what the diet is. I have some 1 year old Leghorns. They are just a little bigger than my two month old New Hampshire Red pullets

leg horns are great egg makers.
I have 11 and the are only half the size of my 23
Barred Rocks and they aren't even laying yet.
The leg horns are a year old.
I plan to make broth out of them when they are done.

I would cut my losses and invite them to some chicken soup yesterday. Chalk it up to experience. If you want the best chicken for meat with the best feed conversion rate and in the shortest time possible,( for dressed weights at 42 days for 1-2 lb. game hen, 6 weeks for 3.5-5 lbs., 8 weeks for 5-8 lbs. 10-12 weeks for 9-12 lbs). consider the Cornish X as it is the industry standard for chicken meat.
 
I have leghorns (9) that I am processing this week at 13 wks. They were the roos from a classroom hatching. I have 2 hens left after raccoon attacks. The girls are staying and are already living with my adult birds.

There is hardly anything on the little boys. They run around so much and hardly eat. I am just planning on using them for soup.

I have three of the puny little things and wonder if there is even enough meat for that.

Broth, maybe. But soup? I have my doubts.

I'm assuming these were just "packing peanuts," not birds you ordered for meat. As the others said, they'll never be really meaty, but just butcher them when they look good, somewhere around 14-18 weeks.
