What to do with canned chicken?

I've never canned any meat before and have to admit to being a little intimidated by it. I'm always afraid I won't do it right and make my family sick. We are of German heritage and it's in our blood to make sausage out of everything and smoke it.

My grandmother has made this casserole with canned chicken for years. Not the healthiest thing and sounds TERRIBLE to most people, but I indulge in it occasionally and everyone I've ever seen try it loved it.

1 large or 2 small cans of chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Mexican style tomatoes or Rotel (hotter)

Put everything in the blender and puree ( no draining! it is best to put the chicken toward the top of the pile)

put in a pan and add enough crushed tortilla chips to make it kind of stiff.

cover with Cheddar cheese and bake till warmed through.

I eat it with more chips for the crunch factor.
 
Your are right...the mental picture that gives is not pleasant. I don't know if I'm brave enough to give it a try.

sounds like a true '50s dish and perfect for a teen gathering; I think I will let mine try it, they love stuff they can make super easy.
question, do you mix the chips in or pile on top?
 
Mix them in, it is super well, soupy after you puree it, you want to mix in enough broken chips to make it pretty much be able to stand up after it's warm. I use the extra chips on the side and often eat it like a dip, lol, cause I've just gotta have the crunch too!
