Have you ever roasted a whole pig?

What methods should I use to roast a whole pig? I am looking for different ideas. We are doing this for a family get together. We were thinking to put the pig in the ground covered in banana leaves.

Is that the best to do?
 
The pit in the ground covered in leaves, is essentially a Hawaiian method. I personally have not done it with pig, but have with a side of venison or chickens. You can wrap in aluminium foil if you do not have banana leaves handy. Corn leaves work well too. Makes for a nice tender meat..!
Another option and the most common method (in WI at least) Is to rent a to rent a pig roaster, which is a large charcoal cooker with Rotisserie to turn the pig as it cooks.

Very common here in the south....build a fire...pig is sort of sandwiched in chicken wire...hang in front of fire....have either an electric turner or long pole to turn....drink lots of beer while you stare at it....drink more beer....a little more beer....then eat!

Whole pigs are regularly cooked for the big parties here in Thailand. A charcoal barbeque is made in half an oil drum and the pig is slowly turned over it on a spit for as long as it takes. No leaves, herbs or other embellishments are used during cooking. I understand that this process requires many men from the village to take part and they must drink copious amounts of alcohol to make sure that the pig is properly cooked.
 
My DH put a small hog on a grill once. told me to keep an eye on it that it was on low and there shouldn't be anything to do. I was inside cleaning and looked out the door. The whole grill was engulfed in flames -- I called DH and asked him if it was suppose to be that way. I went and got the water hose and put it out -- we had crispy piglet at the party.

I have always helped out with it when it is done in a pit done it in a pit like perolane described.

Well, there probably are some similarities and some differences! I bet your pig roasting recipe doesn't include having to put ice in your beer glass to keep the stuff cold.
