I think my chicken's eggs are making me sick

Quote:
not all eggs are the same........first all store eggs are washed and disinfected......as much as hate to say it you should wash eggs that you eat, if not, my guess is the eggs that are making you sick have not been cooked to the proper temp. boil eggs ok ..bet one with running yolks will make you sick.

Some may find it hard to believe , not all fresh eggs ,and home flock are disease free....buy a good egg wash to make your eggs safe. SALMONELLA Common with chickens and eggs........so if not fully cook to proper temp. can may you sick ,most adults not real sick.

On the other side teflon pans can make you sick also....

I'll have to look it up, but I'm pretty sure salmonella wouldn't create an immediate reaction - it will make you sick, but not within minutes of eating the egg. if someone has the info on this, please post, and I'll look it up when I get a chance later today.

here we go:
Symptoms of salmonellosis include diarrhea, fever, and abdominal cramps. They develop 12 to 72 hours after infection, and the illness usually lasts 4 to 7 days.
if the symptoms are immediate, it's not salmonella.

"Staphylococcal toxins are fast acting, sometimes causing illness in as little as 30 minutes..."
"Staphylococcus aureus...has the ability to make seven different toxins that are frequently responsible for food poisoning." http://www.cdc.gov/ncidod/dbmd/diseaseinfo/staphylococcus_food_g.htm#3

Even
if the eggs were the agent, it seems unlikely that the symptoms are from a toxin since even "mild" poisoning usually has worse symptoms than stomach discomfort.

It doesn't behave like an allergy, either, since there's no other allergy symptoms that would normally appear within minutes of eating...and if it was egg protein intolerance instead of an egg allergy, as someone else said, egg is egg...the protein would not likely be tolerated hard boiled if it's not tolerated scrambled.

If the symptom occurs only with scrambled eggs and not hard boiled eggs, like another poster mentioned, I'd also tend to think it was something else environmental that's entering the picture during the food handling.

Hope you get to the bottom of it.

Well this is a very old post, but I do think I figured out what eggs were making my sick. It was the duck eggs. Cant eat them no way no how. But I can enjoy chicken eggs if I still had a bunch. My flock got taken out the other nite by 2 random loose dogs during the daytime while the family was gone. But by summer I might build up my flock again. How I knew for sure it was the duck eggs It was during thxgiving, I had used up all my chicken eggs for other stuff and duck eggs was all that was left. My mom used them in a corn pudding recipe, then hence the stabbing food poisoning pain came soon after I ate thxgiving dinner, which The only thing whith eggs I ate was the corn pudding. Didnt have pie yet or at all that nite cause my tummy felt icky.

Why would duck eggs make you sick but not chicken eggs? Is this just a personal allergic reaction to duck eggs, or is there something wrong with these duck eggs?

I think someone else mentioned it here on byc , not sure but I think something with the proteins. Cant remember but, I am not eating the duck eggs no more. The rest of my family can eat them and not have a reaction of any kind. I used to scramble the duck and chicken eggs together, but I started noticing I didnt feel well after eating eggs. It took awhile and a long avoidance of eggs period to figure it out. I had to be detective for my stomach. On thx giving I only consumed duck eggs. Still dont really enjoy scrambled eggs anymore either. Getting sick like I did several times ruined it for me.I think also my stomach just started getting more sensitive. Ive eaten eggs my whole life, but now I dont eat them as often.

I see. You are allergic to duck eggs, or you can't easily digest duck eggs.

I understand that being really sick after eating eggs doesn't help give you an appetite when you think about eating eggs.

Hopefully you can get back to enjoying chicken eggs again.
