Yeah Heritage Turkeys don't start to lay until march or April. So there is no way to have birds available until  October at the earliest and that is pushing it.

My breeder Tom is just now looking great and he is 2.

 

You can use artifical lighting on them and they will lay earlier so you would need for them to lay in Decemeber to have January birds.

To clarify your contradiction, most turkey hens don't start laying until spring, but it is possible to get them to lay earlier using lighting, just like in chickens. Many breeders do not, but there are some who do. For Standard bred show birds which are not really competitive until their second Fall no matter how early they are hatched, there is not much benefit in getting the hens to lay earlier.
