Cast-iron waffle maker secrets?

Yeah, I know the thread is ancient.

But there are three things I will say about making waffles in cast iron:
1. The cast iron must be seasoned. And once it's seasoned ... NO SOAP FOR YOU! Scrub it with a wet nylon brush if needed, but never use soap on cast iron. Wipe it dry, rub a little more oil on it, and put it away until next time.
2. Get it hot before adding food.
3. Don't make your waffle batter with water or even regular milk. Use buttermilk. And if you don't have buttermilk, add a tablespoon of lemon juice or white vinegar to each cup of milk in the recipe. You need some acid to react with the baking soda or baking powder. Stir the liquids together and let them sit for a minute before adding to the dry ingredients. It makes a more fluffy waffle. Ditto for pancakes.
