This is our 1st year to grow Poblano peppers and we have a bumper crop of them. We love to make chili rellenos with them but there are so many of them, we can't keep up!

Can these peppers be frozen? Is it best to char them and remove the tougher outside skin first? Or should we just make rellenos like usual but freeze them to cook later? Any other suggestions on how to preserve them?

Thanks!

Well, the peppers were waiting so here's what I did with them:

Roasted & peeled off outer skin
Slit them open
Removed seeds
Laid them flat on deli paper (had enough to make a stack of peppers)
Put them flat in a freezer bag and stowed them in the freezer

They should be good this winter in chili and soups (hope so, haven't had these frozen before)
