Saddle feathers are at the very end of the back at the base of the tail. Saddle feathers, like the hackle feathers (on the neck) are more slender, pointed, and long as the cockerel reaches sexual maturity.

They are all pullets. At that age roosters would have significantly larger red comb and wattles

Not a black, but a Blue Australorp cockerel at 7 weeks.

I need help determining weather our australorps are hens or roosters. They are 16 weeks exactly. Can you help give thoughts? I have no clue what saddle feathers look like either!

Yes all females the males will have a white top hat on them.
