I've got the Brinsea 56 Ex. The three big tick items for me are:
Auto Turning & Auto Humidity
A very easy to use console from which you can easily view and adjust all your settings
I think it can also do cooling periods (for those eggs that need it) - but I don't use that
As a brand, Brinsea are reliable, well designed and well built.
I find mine very easy to clean and there are a good selection of accessories and alternative parts available (You can get different sized egg trays for example).
I also like the visibility of the Brinsea (compared to other brands) - it is very easy to see what's going on in the entire incubator which I appreciate.
