Can predators open these latches?

The wood heart for sure they could open. The other one not so sure as I barely can open it on my coop. However, to reinforce mine, I used eye screws and carabiners. They say anything a toddler can open - a raccoon can.

Very simple.

Has worked well for over a dozen years.

I have this type of clasp on several doors.

So it seems that most people use carabiner clips. Raccoons can't open them? Most toddlers I know can. I was thinking of putting locks on my clasps, but carabiners would be much more convenient.

Depends on the carabiner. Some of mine (the cheaper ones) are easy to open. But, real heavy duty ones are much harder. You want good quality if you want to keep predators out of the coop.
