candied cocks comb?

I saw an episode of bizarre foods once where they ate a candied cocks comb, we're butchering a roo this week and I'd like to do something with the comb but I can't find a recipe. Anyone ever done this?

I like them braised 'til tender then rolled in spiced flour and flash fried but I couldn't handle them (or any kind of meat) 'candied'.
