Welcome! We have had our chickens just over a year in the Wildhorse neighborhood (between Pueblo and Pueblo West), so I'll try to offer what wisdom I hope to have. 
It seems that Orpingtons, Bard Rocks, and australorps do well in the crazy cold we get here in winter.
We generally get our pellets from Sweenys on 4th and our alfalfa and wood shavings from Big R on the bypass. (I'm sure there's probably more options with the farms on the mesa during the right!seasons, I'm just not sure!exactly what).
