Day 21 tomorrow

so, this is my first ever potential hatching

1) It’s day 21 tomorrow. How , apart from seeing them, will I know if the chicks are hatching.

2) At what day do I say... that it, no chicks

3) if there’s no chicks , what do I do with the broody hen, just let her be, or try and break the brood cycle

If the eggs are under a hen, the broody cycle will be broken once the chicks hatch.
The broody hen knows what to do. You need to do nothing other than providing starter feed and clean water. The hen can eat the chick feed.
Just relax and count the chicks when the hen is walking around with them.
