Do doves always hatch 2 chicks, one of each gender?

I have always been told that doves and pigeons hatch 2 chicks, one a male and the other a female.
I want yo know if this really does happen and if so, how does this occur.
I am just trying to get a better understanding of sex change in birds, which I am doing a science project on.
Can anyone tell me if doves really hatch in a "pigeon pair"?

I think it's better to say, they lay 2 eggs before sitting on the eggs seriously for the hatching process.

Whether 2 eggs will hatch, depends on the fertility and other external conditions, including skill of the birds (though that gets better as the bird gets more experience).

And then as far as sex, it's not determined by the parents or by some kind of hatching process. With a 50% chance on 2 eggs, it is very possible to randomly get the combination of babies that old_strain_lover mentioned.
