Can you tell the difference between a fertile and an infertile egg when you crack it open to eat it. I sell/give away my extras don't want to surprise anyone once the rooster gets older
 
Nope, no difference! Just egg! Have you seen the "sticky" under Incubating and Hatching eggs? There are several pictures in there that show you the difference in the two. Pretty cool!

At times, I see a little red spot on the yolk. What is that?

I rehomed the two roos, so no fertile eggs.

Look at blood spots, in the internal defects section of this link. Anything in the egg laying factory can wind up in the egg. The link gives several possible causes but I think it is very often genetic. Some hens are just more prone to blood spots than others. It has nothing to do with fertility or roosters.
