It depends how old it is, older= more toughness but more taste .That reminds me, we have quite a few roosters that need to go to freezer camp...does a young rooster cook up ok? I heard the taste can be gamey?
After cleaning you should put it in brine for 24-48 hours, than cook it slowly to a nice stew with onions carrots and some root vegetables ,or make a wonderful curry!
