That reminds me, we have quite a few roosters that need to go to freezer camp...does a young rooster cook up ok? I heard the taste can be gamey?
It depends how old it is, older= more toughness but more taste .
After cleaning you should put it in brine for 24-48 hours, than cook it slowly to a nice stew with onions carrots and some root vegetables ,or make a wonderful curry!
 
What do you use now? I originally went with a wafer because Sally recommended it. I had good hatches with the first, but the second I ordered is welded on crooked, a different brand, and not as reliable imo.
I’m using a Brinsea 20 now, and though it does less eggs at a time it’s done nothing to help the chicken math situation as I’d hoped it would.
I think the wafer was defective. I should have sent it back but needed it right away so I didn’t. Super hard to keep adjusted.
