I've also heard that people put golf balls in the nests to deter the chickens that break the eggs.

The dremel CAN hurt if you get to the blood vessels BUT on the other hand, maybe she NEEDS you to get to the blood vessels so that she can not cut into the egg plus that it will smart when she goes pecking for a couple of days and maybe it will be enough of a reminder that she will want to forget that she ever pecked open an egg in the first place.

Also, if you do see a spot of blood and stop dremelling right there, the dremel should have cauterized the vein if you stop at that moment. A tiny bit of blood can't kill her.

Finally, I can not believe that it was the Sussex. Sussex can do no wrong! Just look at my nic!
