Good Morning Everyone!

Nat--I am proud of you anyway! You can do it, you just have a lot going on in your life right now. Keep it up and it will happen!

charmed--I am proud of you too! I hope it rubs off on me soon! I am still cut way back, but the letting go is the hardest!

Brindl--Thunder was better last night. Well, I don't know for sure, we were gone most of the evening, so I don't know what the heck he was up to while we were gone!
 
Good morning!

I wanted to stay up and read last night but I was exhausted. We had thunder storms off and on between yesterday afternoon and sometime this morning. One big boom woke us up, and also the Guineas who have decided they need to roost right by our bedroom window

Oh yeah, and we did go to my in-laws for supper last night. We had, fresh from their garden, corn on the cob, zucchini, potatoes and green beans with zucchini brownies for dessert. It was all very good!!

OOOh that dinner sounds good! I think guineas are so pretty but I am not into making my property any louder than it is...Someday when I have a small coop far enough away from house maybe- Its been raining up a storm here for days! Played softball in it last night-freezing ..but we won 17-8 woo-hoo

Michelle I am jealous of your supper! We are still watching our garden grow, instead of eating it. Are you coming down with something? I hope not

This is what we had for dinner last night. I got it in an email. It is easy, and tasted really yummy. I didn't have precooked bacon so I fried up my own. I also left out the tomatoes.



Hip to Be Square!
T. Bell's wacky Bacon Ranch Tortada SOUNDS delicious, but is it really worth the hefty stats? NAH. Our Flat-tastic Ranchy Bacon Wrap is a much better way to go!

Ingredients:
1 tbsp. fat-free ranch dressing
1 tbsp. mashed avocado
2 oz. cooked skinless lean chicken breast, chopped
1/4 cup shredded lettuce
2 tbsp. chopped tomato
1 tbsp. precooked real crumbled bacon (like the kind by Oscar Mayer)
1 La Tortilla Factory Smart & Delicious Low Carb/High Fiber Large Tortilla

Directions:
To make the filling, combine dressing with avocado in a bowl and mix well. Add all other ingredients except the tortilla. Toss to coat.

Lay tortilla flat on a clean, dry surface. Spoon filling onto the center. Carefully fold the tortilla sides toward the center, followed by the top and bottom, overlapping to enclose the filling and form a square. Press gently to seal.

Bring a skillet sprayed with nonstick spray to medium-high heat. Carefully place the wrap in the skillet, seam side down, and cook for 3 - 4 minutes. Gently flip and cook for an additional 2 - 3 minutes, until lightly browned.

Slice in half diagonally or just bite right in. Tor-TADA!
