How do I know when to stop collecting eggs from my Rouen hen when I see her and my male starting to

Hello. I have a male and female Rouen and I was wondering when to stop taking her eggs out of the coop. I would like her to hatch a clutch. They are not breeding until next year but I was just wondering. Please tell me when to stop collecting the eggs so I don't take out a fertile one

I would wait till they mate, thats when she will be the most fertile,
