Started my home made incubator a few days back and noticed a 2 degree difference between my new hygrometer and my new STC1000 temperature control which one should I take as correct ?

I'm assuming you mean thermometer and not hygrometer. Have you calibrated your thermometer?

The STC1000 will need to be calibrated just like your new thermometer. I wouldn't trust either one without doing so.

Once the thermometer is accurate, then you can adjust the settings on the STC to compensate. There is an offset value setting you need to use.
