That's how I was thinking about doing it. An all day low temp smoke.
Barring that, I'd do it in the oven.

We got a bunch of rain and a ton of lightening which I got to see too much of while trying to get my stupider birds into the coops with the smarter ones. I should have just gone for the birds with some sense and left the others
